The temp gauge jumps around on my E12 when I adjust the heater blower, not too bad but it does...it's a common problem and I just learned to live with it. But if I were to fix it, I would look for poor grounds, ground loops (could exist if the wiring was modified) or wire size issues. Which way does the needle move when the lights flash? That might be a clue as to where to start looking.
As for the low beam warning, my best guess is check the module first.
Above the glove box (on mine anyway) there is the headlight module. It should be marked with HELLA LKM. Open it up and look for cracked solder joints on the PCB. Another cause could be dirty connectors at the headlights. Could be a flaky connection somewhere that causes the light to go out and come back on triggering the warning light.
And about the acceleration. I think every car is different. It depends on body weight, engine size, transmission, and final drive ratio. Your 325es (E30?) is a light car with a 2.5L motor - a desirable combination. My E12 has a auto and is a real dog at takeoff but once I get the engine past 3K it shoots off like a rocket. Also the tranny had a sticking valve body and doesn't downshift to 1st sometimes causing me to start off in 2nd. If you listen carefully when you come to a stop, you should be able to hear all the downshifts right down to 1. My 635CSi, on the other hand, takes off good at the light. I don't even push it and it leaves the other cars behind in my mirror. Has a much flatter powerband with lots of low end torque. Something I really have to watch when I'm driving because it has a tendency to shoot past the posted speed limit.
